Baked Meatballs

I love these light and full of flavour meatballs. Easy to make and easy to bake with a high protein content.

I used:

  • 250 gr turkey tight mince
  • 250 gr extra lean beef steak mince
  • 2 egg whites and 1 yolk
  • 1/4 cup chicken stock
  • 1/3 tsp garlic powder
  • 1/3 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried coriander
  • pepper to taste
  • a dash of cumin
I mixed all the ingredients except the eggs in a big bowl and left them in the fridge over night so the meat can "infuse" with the herbs. When done I added the eggs and shaped them into golf sized meatballs placed them on greaseproof paper in a baking tray. Baked them at 200' C for about 30 min in a preheated oven.

If you don't have the time or you don't plan this in advance just mix all the ingredients leave for 5 min and then shape the meatballs and bake. It's that simple :).

You can serve them with salad, in a sandwich or simply with mustard . For a more complex dish you can add the to a simple tomato sauce and serve with your favourite pasta.

Enjoy xxx
